Toor / Arhar
The yellow dal a great many pots begin with.
Toor, also called arhar, is pigeon pea. We buy it from growers and keep the name a kitchen already uses. Split, clean, and still a crop.
What we are looking for: Pigeon pea from a field we can walk, not from a pile we cannot name.
