Mustard seed / Rai
Rai, the seed for the tadka, cousin to the oil and not the same.
Mustard seed is for tempering and for pickles. It is not the bottled oil. We keep the two apart, and we want the seed from a crop we can name.
What we are looking for: Seed that still pops like mustard when it meets the oil.
