Mustard, pressed the slow way, sharp and plainly mustard.
Kachi ghani is the wooden press, unhurried. This oil is mustard seed and that method, not a refined blend wearing the word mustard. We want the pungency still there.
What we are looking for: A press we would cook with, and seed from a crop we can name.
